I find these little mysteries fun to research. Looked up the dealer order guide on another site. The latest revision they had was 06/07/24. On that guide it lists the multicontour front seats and B&O 14 speaker audio as standard equipment on the ST and the twin panel moonroof as standard and only available on the 4WD models. This fits with the window sticker dated 09/04/24. It does not even list a Sun and Sound Package. But I did find an article on the Ford Authority site that says:
"The 2025 Ford Explorer ST has gained the Sun and Sound Package as part of Job 2 production, which applies to all models built on or after November 25th, 2024. That package adds a host of notable features such as the 14-speaker B&O sound system with a subwoofer, multicountour seats with Active Motion in the front, and the Panoramic Vista Roof with Power Shade, all for an extra cost of $2,995."
The other sticker has a date of 11/26/24, so is a very first Job 2 built and falls under the new Sun and Sound Package. Sounds like Ford took the features that were standard on the ST and made them an optional package, lowering the base price accordingly. On my 2020 there was a Premium Technology Package that was pretty much the same thing, but instead of the roof it has the larger touchscreen. Don't know what the difference is between the Twin Panel Roof and the Panoramic Vista Roof other than a name change.
So the salesman is pretty much correct. They are packaged differently but have the same equipment. Did notice that the Job 2 Explorer has the optional floor liners that the earlier build does not on the window stickers you attached.
