Is this possible?

I got some update in the middle of the night?

I use the cruise control a lot (love the adaptive thing, I am so lazy now).
It has now started flashing at me if my speed is exceeding the posted speed? Annoying AF!
Can that be turned off?

Somewhere in the settings is an "on/off" setting for the speed warning. I don't remember exactly where, but it is there.

Yes. Yes you can turn that off in the Settings, Assistance, Driver assistance, Speed Sign Recognition menu

You can change your "allowances" to avoid having it flash when you go above the speed limit.

That is exactly what I did, max is +20 mph

It also seems to stop flashing after a while, but I do think it now drops automatically at the next lower sign

If it is dropping according to the speed limit signs its reading, then you are on the Intelligent speed control. I like that, but too often it reads the highway numbers as a speed limit and thinks I can go 80 in a 25. I don't want to have to explain that to an officer. LOL.

No idea how it could have been switched

The camera also sometimes reads speed limits on a parallel service road and slows down from 45 to 25. That's annoying!
