2021 ST with OEM 20”X8.5 W/44.5mm offset. Looking to changeout rims for new ones with either a 30mm or 20mm offset. Other than moving the face of the rims closer to the outside of the fender, are there any mechanical, handling, or performance issues I need to be concerned about when changing to either one of those offset dimensions?

No but you have to know what wheel width you want before you pick the offset.

Sorry, should have mentioned, I’m using the same size and width tires (255/55 R20) as what is currently on the OEM rim20x8.5; just changing offset from 44mm to either 30mm or 20mm.

Assuming the new rim is also 8.5" wide, in that case, it would just be like using a 1/2" or 1" spacer. Either +30mm or +20mm will be totally fine.
