I just recently learned how to properly make scrambled eggs…. I am not saying I never knew how or did them wrong, just go about cooking them differently. I also fry up some tomatoes, mushrooms and sour dough toast. Been one of my quick and delicious go to meals from time to time.
My daughter's birthday is tomorrow and I'm making her favorite meal. Filet mignon with a port wine reduction sauce and rosemary roasted baby potatoes. I'm going to try and reverse sear the tenderloins. Never tried that before. I finished up the port wine reduction tonight. Pic is what I start with (beef broth, port wine, honey, shallots and rosemary).....it then gets reduced significantly and strained through a cheesecloth.
My daughter's birthday is today so I made her breakfast. Made scrambled eggs and fingerling potatoes/onions and used my homemade queso that has sausage, chorizo and peppers in it. She enjoyed it. I'm now prepping dinner by dry brining some filets in Maldon sea salt flakes and pepper.

It's not fancy, but I made my kids something I loved as a child. Probably triples your cholesterol. Cavatappi pasta plus Italian seasoned diced tomatoes, bacon and Velveeta cheese. Throw it in the oven and melt it all together. Kids love it.
Had pinto beans and corn bread Sunday. Finished them yesterday. Grilled pork chops to go with them. Simple meal, but comfort food on a rainy day. I’m from a large family and we had soup beans once a week while growing up. Told myself I’d never eat another pinto bean when older, now I still enjoy them.
Made something different for the kids and wife for lunch. I made a white sauce which started with a roux of butter, flour and EVOO which I added garlic, shallots, cream, parmesan cheese and some herbs. On top of the white sauce I added shredded mozzarella and romano cheese. Added some slivers of red onion along with some fresh prosciutto on top. Cooked it and then added baby arugula tossed with a little EVOO, lemon juice and balsamic vinegar. Voila'

I will take it off and on the heat a few times while constantly mixing it. I’ll add salt and pepper and then once it is pretty close to being done I mix in some sour cream.
