You do not drive while doing it. In park with the parking brake on, turn the ignition on but do not start it. Sitting in either front seat you want to deactivate, fasten and then unfasten the seatbelt (4) full times within 30 seconds at a mederate pace.

Ford MoCo is aware of the mirror issue. It is a software glitch and is not a process issue with how you activate or deactivate them.
